Small Batch Brownie Recipe
Maybe you only need to make brownies for a few people. Maybe you don’t want a ton of leftovers hanging around the house. Or maybe you just like stuff small. Whatever the reason, this small batch recipe for brownies is here for you!
Ingredients
- 1/4 cup cocoa powder
- 6 tbsp hot water
- 1.25 ounces dark chocolate, chopped into small pieces
- 3 tbsp butter, cubed
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla
- 1 ½ cup sugar
- 1 cup all purpose flour
- 1/2 cup chocolate chips

- Pure Vanilla Extract or Vanilla Paste
- Trader’s Joe’s Dark Chocolate Pound Plus Bar
These are ingredients that I use frequently enough to buy in bulk, because I’m scared to ever be stuck without them!
I really hate driving to my nearest Trader Joe’s (it’s in a really congested part of town and usually just not worth the trek with three little kids in tow).
But I do love the Pound Plus bars more than any other baking chocolate in most stores, so I occasionally check Amazon for decently-priced listings with free shipping (the one I linked above is pretty good) and have them delivered!
It’s a little more expensive than buying them in the store, but for me it’s totally worth it.
Directions
- Preheat the oven to 350ºF.
- Whisk together the cocoa powder and the hot water to form a smooth paste.
- Add the chocolate pieces and the butter to the bowl. Microwave for 30 seconds, and then stir until melted and smooth.
- Mix in the egg, oil, vanilla, and sugar.
- Mix in the flour and the chocolate chips.
- Line a 9.5 x 5 loaf pan with foil or parchment and lightly grease with nonstick cooking spray. Pour the batter into the prepared loaf pan. I like this nonstick one from Amazon.
- Bake for 40-45 minutes. Start testing for doneness at 30 minutes. The edges should be pulling away from the sides of the pan, and the top should look crackly and dry. There should be aslight firmness in the middle when gently pressed on with your fingers.
- Allow to cool for 30 minutes before cutting and serving.
