A Homemade Lemon Poppy Seed Loaf for a Yummy Kids Snack

I am always on the hunt for great after school kids snack. If there is one thing I have learned over the last 10 years of being a mom, it is that a fed child is a happy child. So, with school days keeping us busy it was time to pull out a recipe that keeps the kids happy and their tummies full…lemon poppy seed loaf. This lemony loaf is a hit in our house. In fact, it’s actually hard to keep my husband and I from eating the entire loaf…before the kids get a chance. As my eldest daughter would say, “the secret ingredient is love.”

Steps:

  1. Beat butter and sugar together, until fluffy…add eggs one at a time.

  2. In a small bowl, whisk flour, poppy seeds, baking powder, salt and lemon zest together.

  3. Add milk and dry ingredients into butter mixture alternately..one half at a time. Stir until all ingredients are combined.

  4. Pour into a 8” x 4” loaf pan.

  5. Bake in 325F oven for 1 hour, until tester comes out clean.

  6. To make the syrup combine sugar, zest and lemon juice in a small saucepan…heat over medium heat until sugar has dissolved.

  7. Pierce the warm loaf with a long skewer and pour the syrup over the loaf.

  8. Allow loaf to cool in the loaf pan and then turn out onto a cooling rack.

  9. Enjoy.

This loaf can be turned into muffins; simply pour into muffin pan, lined with muffin cups, and bake for 15-20 minutes. After the muffins are baked, pierce the muffins and pour 1 tsp of syrup on each muffin. This loaf makes a lovely afternoon kids snack or after school treat. I know my girls love it and I hope your kids will too.

Mmmmm… I can smell the lemony deliciousness just thinking about it! This would make a much better kids snack than the processed stuff that I usually grab. Great job, Mama!

FAQs

Why lemon poppy seed? ›

Sweet and Savory! Poppy seeds can be found in both sweet and savory baked goods. Their distinctive flavor and crunchy texture pair nicely with lemon, honey, raisins, and almonds. They also add visual interest when added to cakes, muffins, quick breads, and pastries.

Are poppy seeds good after expiration date? ›

If your poppy seeds are past the expiration dates, you can use your best judgement to decide whether or not they can still be used. If they pass the smell test, look normal, and you've kept your poppy seeds properly stored, chances are they will still maintain a good flavor profile.

What does the poppy seed symbolize? ›

Poppies have long been used as a symbol of sleep, peace, and death: Sleep because the opium extracted from them is a sedative, and death because of the common blood-red colour of the red poppy in particular. In Greek and Roman myths, poppies were used as offerings to the dead.

Can babies eat lemon poppy seed? ›

Poppy seeds may be introduced into meals as soon as baby is ready to start solids, which is generally around 6 months of age. Just make sure that the poppy seeds are “food grade” and sold from food or grocery retailers you recognize. Unwashed, non-food grade poppy seeds carry a high risk of opiate exposure.

Do poppy seeds go rancid? ›

Due to their high oil and protein content bulk poppy seeds tend to go rancid quickly so be sure to purchase them in small quantities.

Is poppy seeds good for kidney patients? ›

The potassium content in Poppy seeds helps in treating kidney stones and also prevents their re-occurrence.

Should I refrigerate poppy seeds? ›

Your spices will be happier when stored in a cabinet or drawer instead. Sesame seeds, poppy seeds, and a few other spices are the exception. These do better in the fridge.

Why are people drinking poppy seed tea? ›

People drink this tea to feel a natural high or to treat pain or anxiety. However, drinking large amounts of poppy seed tea may be deadly. Drinking poppy seed tea increases the risk of opioid overdose and can potentially lead to misuse and opioid use disorder.

Why do people put poppy seeds in muffins? ›

Poppy Seeds: These itty-bitty seeds add a mild nutty flavor and slight crunch to baked goods. I love them on bagels, too! Butter: Creamed butter gives these muffins a cake-like texture; plus, it adds deliciously buttery flavor.

Can you take a drug test for lemon poppy seeds? ›

Do poppy seeds affect drug tests? Poppy seeds don't have nearly enough opiates to intoxicate you. But because drug tests are exquisitely sensitive, consuming certain poppy seed food products can lead to positive urine drug test results for opiates – specifically for morphine, codeine or both.

What is a substitute for poppy seeds in lemon cake? ›

I understand, some of you may have difficulty getting poppy seeds. You can replace them with any seeds, chia seeds, flex seeds, or even nuts to go with the lemon flavour.
