How to Make Meatloaf in a Ninja Foodi

Aunt Lou here.

Momma’s meatloaf always has been and always will be one of my favorite recipes. So much so that I made it into a crock pot recipe AND had a blast doing a cooking video of the crock pot recipe with Mikey. It also freezes well, so if you don’t need as many servings, you can always freeze some to have a quick dinner for later! It only makes sense that I would give it a try in my Instant Pot! You guys are gonna LOVE this! Meatloaf has never been so easy!

Ingredients

  • 1 lb ground beef
  • 1 cup oats or crushed crackers
  • 1 large egg
  • 1/2 large onion diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup ketchup plus some for topping
  • 1 piece aluminum foil
  • 1 cups water

Instructions

  • Mix together your ingredients (except the extra ketchup for topping and water) and mold into a loaf.

  • Make a dent down the middle of your loaf.

  • Place your loaf in a greased “boat” made of aluminum foil.

  • Top your meatloaf with ketchup.

  • Pour your water in your 6-quart Instant Pot.

  • Place your loaf boat in your instant pot (making sure the sides are much higher than the water).

  • Place the lid on your Instant Pot and seal. Set on the meat setting for 30 minutes.

  • Let it naturally release for 10-15 minutes. Quick release and serve! (If desired, put you loaf boat on a cookie sheet and broil on hi for about 90 seconds to 2 minutes to crisp up the edges and take your ketchup to the next level!)

      Hi Jessica!

We use “old fashion oats” for this recipe. No grinding necessary! They work as a binding agent to hold the meatloaf together.

      Enjoy!

      Hi Tonya!

I haven’t tried doubling this recipe. We test every recipe before posting it, especially with the Instant Pot, and don’t like to make recommendations without trying it first. Be sure you use a meat thermometer when you try it the first time to ensure your meatloaf has reached safe temperature. If you give it a try, let me know how it goes!

      HI Vanessa!

I’m so sorry I missed your comment last night. Due to the high volume of comments we receive, we are not able to answer them all immediately. For future reference, you put the ketchup on top of your meatloaf right after you put your loaf in the aluminum foil “boat”. I have updated the recipe to show that. I hope you enjoyed it!

FAQs

Can I use my Instant Pot as a crock pot? ›

Press the "Slow Cook" button to select the slow cooking function. Set the cooking time and temperature. The Instant Pot has three temperature settings for slow cooking: low, medium, and high. Use the "Adjust" button to choose the temperature and then use the "+" and "-" buttons to adjust the cooking time.

What is the secret to a firm meatloaf? ›

To help your meatloaf stay together add things such as eggs, bread, crushed croutons, oatmeal, crackers, and breadcrumbs, these are all key ingredients that help meat stick together.

Is Instant Pot better than crock pot? ›

An Instant Pot does have more functionality (like sautéing, pressure cooking, slow cooking, and acts as a rice cooker, steamer, and warmer!) than a slow cooker, but if you don't plan to use all of its extra functions and just prefer the simplicity of a slow-cooker, then you might prefer a Crock-Pot.

Why milk instead of water in meatloaf? ›

Milk and other dairy products, like heavy cream and buttermilk, contain both water and fat, adding two types of moisture to our meatloaf. There's a long-held theory that milk can tenderize ground meat, and this is the reason often cited for cooking ground meat in milk to make a Bolognese-style ragù.

How long does Instant Pot cook for compared to Crock-Pot? ›

Generally, if your slow cooker meat, soup, or stew recipe calls for 8 hours on the low setting or about 4 hours on the high setting, it should be fully cooked in about 25 to 30 minutes in the Instant Pot. For chicken or turkey, use the 15-minute poultry button. While volume doesn't matter, density does.

What's the difference between a crockpot and a slow cooker? ›

The pot of the slow cooker usually sits on a base that houses the heating element on the bottom, while Crockpots have their pots inside of a container (or crock) and get heating from all sides. Therefore, slow cookers heat up slower than crockpots, with the heat level higher on the bottom of the pot.

What gives meatloaf the best flavor? ›

Try adding minced garlic, parsley, and thyme for a deeply savory taste. For mouthwateringly bold meatloaf, add Worcestershire sauce, Dijon mustard, and ketchup to the pre-baked mixture. This blend ensures that each bite is deliciously balanced with just a hint of sweetness.

Can you put too many breadcrumbs in meatloaf? ›

Adding more to your mixture is always easier than taking some out. Another common reason meatloaf is mushy is too much filler, like breadcrumbs, bread, and oatmeal. Too much filler will stop it from baking correctly and becoming a fully formed meatloaf.

What is the basic meatloaf formula? ›

In essence, it boils down to a few simple steps: Combine ground meat, eggs, breadcrumbs, and other flavorful ingredients of your choice. Put this mixture in a lightly greased loaf pan and bake it until it's cooked through.

What is more energy-efficient Crock Pot or Instant Pot? ›

When comparing appliances, you'll find that the pressure cooker beats even the most energy-efficient slow cooker in terms of using less power and adding less heat into your home. Pressure cookers consume much less power than a standard electric oven, which uses around 2,000 watts of electricity on medium heat.

What is the advantage of Instant Pot over slow cooker? ›

An instant pot might be a nice upgrade. Do you cook a lot of things that normally braise in the oven or cook on the stovetop for a long time? They cook much, much faster in a pressure cooker. That's really it's biggest advantage over a crock pot, it's much much faster.

What is the difference between a pressure cooker and Instant Pot? ›

Some people use the terms “pressure cooker” and “instant pot” interchangeably, but there is a key difference: An instant pot has a programmable timer and multiple functions, such as slow cooking and sauteing. A pressure cooker doesn't have those features.

What does adding an extra egg to meatloaf do? ›

Sure, egg yolks add some rich flavor to a meatloaf, but the real reason we need eggs is for structure—to help bind the meatloaf together. This is especially important since we're making a free-form meatloaf, or one that you shape by hand, versus using a loaf pan.

What is the best binder for meatloaf? ›

The most traditional meatloaf binder is probably torn up bread soaked in milk, but you can also use bread crumbs, Panko, dehydrated potato (instant mashed potatoes), or just about any other grain.

Do you leave vent open on Instant Pot when slow cooking? ›

Another tip, taken from an Instant Pot Facebook group, is to open the valve all the way on your Instant Pot lid when slow cooking. This allows some moisture and steam to release and keeps the Instant Pot from overcooking your slow cooker recipes.

Can you leave an Instant Pot on Slow Cook overnight? ›

If you are slow cooking in the Instant Pot, you should be able to leave your dish cooking overnight for as long as the recipe dictates. Anything that calls for 8 hours cooking time should be sufficient as long as you make sure you're up in time to take it out of the slow cooker once it's finished.

How long does Instant Pot take to preheat for slow cooking? ›

It shouldn't take more than 15-20 minutes to heat up.

If after 20 minutes your Instant Pot is still heating, rather than counting down the cooking time, it is likely struggling to reach temperature. To override this, you can take the lid off your pressure cooker, press saute, and saute for 2-4 minutes.
