Ingredients list for the French Onion Chicken Casserole
- 3 boneless, skinless chicken breasts (cut horizontally if they’re too thick)
- 1 or 2 teaspoonsgarlic powder
- 1teaspoondried oregano
- Red crushedchilipepper flakes, optional
- Pinchof salt andfresh cracked pepper
- 1cupshredded mozzarella cheese (or Gruyere)
- 2 tablespoonsunsalted butter
- 5 large onions, thinly sliced
- 3clovesgarlic, minced
- 1/4 to 1/2 cupchicken broth
- Fresh chopped parsley, for garnish

Directions
1.To make the French onion chicken casserole: Preheat your oven to 400°F (200°C).Lightly grease a 9×12-inch baking dish and set aside.
2. Melt butter in a large skillet over medium-high heat. Add onions and season with salt and pepper. Cook for 5-8 minutes until soft.
3. Reduce heat to medium and cook, stirring occasionally, until onions are caramelized – about 15 minutes. Pour in 1/4 cup of broth to deglaze if your pan gets too dry, and keep stirring until onions are browned.
4. Stir in fresh minced garlic and cook until fragrant, about 1 minute. Turn off the heat and allow to cool slightly.
5.Season chicken breasts with oregano, crushed chili pepper flakes, salt,pepper, and garlicpowder. Go easy on the salt becauseFrench onion and cheeseare already salted. Arrange chicken breasts in the bakingdish.
6. Divide caramelized onions on top of each chicken breast. Sprinkle shredded cheese on top and bake for 20-25 minutes in the oven (or more, depending on the thickness of your chicken breasts), until fully cooked and cheese is bubbly. Thenbroil for 2 minutes to crisp up the cheese.Garnish the Frenchonion chicken casserole with fresh chopped parsley and serve immediately with steamed vegetables or cauliflower rice. Enjoy!

Tips for the French Onion Chicken Casserole recipe
- You can prepare the caramelized onion aheadof time, and just assemble the chicken casserole at the last minute before baking.
- You can flavor up the french onion with a dash of white wine, sherry or balsamicvinegar to deglaze the pan.
- The cooking time will depend on the thicknessof your chickenbreasts. Cut them horizontally if they are too thick. You can also pound the chicken breasts (gently!) to get them to an even thickness.
- Go easy on the salt becauseFrench onion and cheeseare already salt. The taste of theFrench onion chicken casserole would be overpowered by saltiness.

Cut down on the onions, 1 average onion 11.3 carbs, I shutter to think what FIVE LARGE onions are! Doesn't say servings, but if three, this puts me over my daily limit (I control my diabetes with Keto. This is NOT low carb or Keto as is!!!

Made for myself with two chicken breasts, one cut in half lengthwise. One large onion was plenty for the three servings. (The recipe made dinner for me for 3 nights.). I topped with shredded mozzarella mixed with shredded Parmesan. The cheese was added at the beginning, and it was perfect at the end when I broiled it for a couple of minutes. I love the idea of adding a bit of balsamic or soy sauce to the onions for an additional layer of flavor.

Delicious if you aren’t a beginner cook! Even Gordon Ramsay couldn’t caramelize onions in 15 minutes so if you don’t all ready know how - do a Google or YouTube search. I knew it was WAY too much onion for the recipe but made the amount called for because I knew I’d use the excess onions for other dishes. Deglaze your onion pan with balsamic vinegar for added flavor and as others have said, don’t add the cheese until later in the baking process. I used Gruyere and doubled the garlic because recipes never call for enough.

This is way too many onions. I used 3 and it was too much. The chicken was rather bland. I'd like to try Gruyere as well.

LOVED this recipe, but if anyone can caramelize that many onions in under 45 mins to an hour I want to know the secret! By the time we ate, we were starving, LOL!

Delicious! I have made caramelized onions before, so I know they take a long time and planned for it. You should really give yourself at least 45 minutes to an hour to have them properly caramelized. But the time is worth it! I used a bit of sherry in my onions and topped with Gruyere cheese, it was so good. I felt like there was more than enough onions so I saved some for another use later in the week.

Very good and easy. But my onions took MUCH longer to cook down, and I had an 11 inch skillet. But the flavor was delicious-I did use Swiss cheese instead. I will make it again, for sure!

This was easy to make and tasty, but net time I will add the cheese only in the last 15 minutes. It was all hard and crispy, too much. I carmelized the onions all day in the crock pot and that made things easier. I will make again, with small changes.
