Tahini. The best tahini is pure sesame paste made by grinding sesame seeds. Look for tahini at the grocery store alongside other nut butters, like peanut butter or sunflower seed butter. Check that it isn't processed with added oil. And the good news? It's easy to make homemade tahini.

Lemon Juice. Fresh lemon juice is more flavorful, but in the interest of time, bottled lemon juice or lemon juice concentrate.

Sriracha.Sriracha is a classic chili sauce that is now found in a number of flavors and brands. Check the labels to ensure you use a vegan brand (the same goes for gluten-free). You can also use Sambal Oelek or another chili sauce.

Add a teaspoon of maple syrup, date paste, or agave syrup (or an agave substitute) for a touch of sweetness.

  1. Add the tahini and lemon juice to a small bowl. Mix the ingredients until you have a smooth paste. Add more lemon juice or a little water if it is too thick.
  2. Mix in 1-2 teaspoons of sriracha to start. Taste and keep adding (and tasting) until you reach your desired spiciness. Once you've made this dressing a few times, the amount will be on autopilot.

Sriracha, in general, is gluten-free. The combination of chilies, vinegar, sugar, and other spices in most sriracha recipes and commercial brands, contains no gluten. As a safeguard, it's always important to check the labels to see that it is certified gluten-free.

Is Sriracha vegan?

Many brands of sriracha are vegan; however, you should always check the labels. Sugar, the sweetener in many sriracha recipes, is not always vegan. How sugar is processed determines its status as vegan.

Ingredients

  • ¼ cup tahini
  • ½ cup lemon juice
  • 2-3 tablespoons Sriracha - or another spicy chili sauce

Instructions

  • Whisk the tahini and lemon juice in a small bowl until it becomes creamy and smooth. Add more lemon juice or a little water if you want a thinner consistency.

  • Add the Sriracha. Start with 1 -2 teaspoons. Taste and continue adding sriracha until you have the desired spice level.

  • Makes approximately ¾ a cup of dressing.
