Beef potato croquettes are Indonesian fried potato patties. This recipe is made of mashed fried potatoes and then mixed or filled with ground beef.

In Indonesia, people call beef potato croquettes as “perkedel kentang“. Kentang means potato. Actually, the origin of perkedel comes from Dutch “frikadeller” during the Dutch colonial period in Indonesia. But Indonesian people find it difficult to pronounce frikadeller. So we change it to perkedel. Now, Indonesian adopted this European food and this perkedel is one of the Indonesian food but in different forms.

We have other variants of croquettes, which are potato croquettes, corn croquettes, and tofu croquettes. But this time I will share how to make beef potato croquettes.

I made a different appearance from the original. People here actually mix the ground beef with mash potatoes evenly. But I want to make the beef shine through the croquettes. Therefore I put the beef patty inside the mashed potatoes.

For this recipe, I suggest to serve it with rice for lunch or dinner. I know it’s kind of weird eating a potato with rice. But in Indonesia, we often use potatoes as side dishes along with rice. If you don’t want to, you can eat it as appetizers/snacks dip with chili ketchup.

How to make beef potato croquettes:

Potato

Cut each potato into 8 parts. Fry the potato until nice and golden, but not too dry.

Place the fried potatoes into a bowl, then mash it with a whisk until smooth. Add dry seasoning and shredded cheddar cheese into mash potato. Mix it then set aside.

Mix ground beef with dry seasoning. Divide into 4 parts then make it into a beef patty. Fry beef patty until both sides slightly brownish. After beef patties are cooked, rest it on a cooling rack to remove excess oil.

Divide mash potato into 4 parts.Flatten into ½ cm thick. Place beef patty and mozzarella cheese above it. Then wrap it into mash potato. Coat the croquettes respectively with the flour mix, egg wash and then bread crumbs.

In a pan fry, heat the cooking oil over medium high heat, about 170°C/340°F. Fry the croquettes until nice and golden. After the beef potato croquettesare cooked, rest it on a cooling rack to remove excess oil.

Serve with ketchup and mayonnaise. Enjoy!

    Why do you fry the potato, I usually boil for mashing?

      Because in this recipe, the mashed potato will be fried again with the other ingredients. Frying potato rather than boiling it make the moisture in mashed potato way less and make the finished product not destroyed when fried.

    We have this dish in Colombia, we call it “papa rellena” which literally means “filled potato”. It is delicious. Instead of bread crumbs we use batter to coat the patties and then dip fry them.

    These look delish! However, I think I will bake the potatoes instead of frying them. Baking them will not add any moisture to the potatoes and will certainly not have any oil in them. Seems like there will be more than enough oil when you fry the croquette. Hope they turn out as pretty as yours do.

    The croquette has a bit of history behind it. In Europe it was ate before the dinner as a appetizer served with a mustard sauce. The recipe was introduced by the early Spanish and or Dutch settlers around 1800 to this tropical Archipelago what was then named the Dutch East Indies. The Dutch ruled that Island group for the better part of 350 years until in 1949 the Dutch handed over this Island group into the hands of the Natives of the Islands and the Island was renamed in Indonesia. The cuisine of Indonesia is a rich collection of several other countries like India, Spain, China, Dutch and so on but it found their own flavor by adding the fresh spices of the Islands. Because of the variety of the fresh spices grown on the islands, food tasted always better when it came from the Indonesian “dapur”, we call it a kitchen.
    Living there for the better part of my youth we always say Slamat Makan before every meal.
