These boxes are packed with delicious breakfast foods like eggs, muffins, and fruit. Bistro boxes are also a great option for on-the-go breakfasts. They’re easy to transport and can be eaten anywhere. So whether you’re running late for work or school, or you’re just looking for a quick and easy breakfast, a bistro box is the perfect solution.

Ingredients

With a recipe like this feel free to make it your own by choosing the fruits you enjoy most! Also feel free to use add-ins for your banana oat muffins.

  • Overripe Bananas – You want these overripe because they are the base for the muffins, the more ripe the banana the better the muffins will be.
  • Oats – Old Fashioned or Quick Oats work since we will be blending them up for the muffins. You cannot use steel cut oats.
  • Honey – To sweeten the muffins, you may substitute maple syrup if you prefer that or to make a vegan option.
  • Baking Soda – For a little lift in the muffins!
  • Optional Muffin Add-ins: Some ideas for some extra flavor is 1/4 tsp vanilla extract, 1/4 tsp cinnamon, chocolate chips, nuts, raisins, or fruit bits.
  • Eggs – You will technically want 13 eggs if you are making 6 boxes and want 2 eggs in every box plus you need 1 egg for the muffins. If you realize you only have 12 eggs, no sweat just make 11 hard boiled eggs and leave one out to make the muffins.
  • Fruit – Choose your favorite fruits, you can even put different fruit in the boxes. I personally like to include grapes because they keep really well. Note that some fruits like apples you will want to slice and then soak in water before adding to the box so they don’t turn brown. Some great fruits would be:
    • Grapes
    • Berries
    • Apples
    • Pineapple
    • Melon
    • Orange/Tangerine
    • Kiwi
    • Apricot
    • Peach

Instructions

To make the Banana Oat muffins:

Preheat the oven to 350º F. Add 8 paper liners to a muffin tin.

Add the oats to a blender or food processor. Blend the oats 10 to 20 seconds until a sand like consistency. Add the bananas, egg, honey, & baking soda (plus vanilla and/or cinnamon) to the blender or processor. Blend until it forms a smooth batter, about 30 seconds. If you are using any add-ins stir them in after the batter has been blended.

Transfer the batter to the muffin liners, you will want to fill them about half full.

Bake in the oven for 13-15 minutes until a toothpick comes clean out of the center of a muffin. Let cool in the pan before transferring them to the bistro box.

For the Hard Boiled Eggs

For the stovetop:

Fill a large pot with water, make sure there is enough that all dozen eggs will be able to be submerged. Cover with lid and heat on high until the water begins to boil.

Reduce the heat to medium. Slowly add each egg into the boiling water. Let the eggs cook for 10 minutes.

While the eggs are cooking, make an ice bath in a large bowl.

When the ten minutes are up use a slotted spoon to carefully transfer the eggs to the ice bath one at a time to stop them from cooking further. Leave in the ice bath until cooled. Peel the eggs.

With a Pressure Cooker/Instant Pot:

Add a trivet to the bottom of the pressure cooker. Add 1 cup of water to the pot. Carefully stack the eggs on the trivet.

Put the lid on the Pressure Cooker/Instant Pot and make sure the valve is on seal. Set the Instant Pot to MANUAL/PRESSURE COOK mode for 3 minutes.

While the eggs are cooking, make an ice bath in a large bowl.

Once the timer goes off when the eggs are done cooking, quick release the pressure cooker. Carefully open the lid and one by one transfer the eggs to the ice bath to cool down before peeling.

Clean, slice, and soak the fruit you are using.

Into each box add 2 hard boiled eggs, 1 muffin, and 2 prepared fruits. Cover and refrigerate until you are ready to eat!

tips, tricks and questions

If you are new to meal prepping, you’ll need containers, these can be fancy or super simple, I love these glass ones from Amazon.

The flourless banana blender muffins are not guaranteed gluten free unless you make sure to check that you use gluten free oats!

Have fun with add-ins for the muffins but keep in mind that the batter only makes 8 muffins so whatever you are adding don’t go overboard

Use your favorite fruits or whatever is in season at the time!

  • 12 eggs
  • Fruit to fill the Boxes (example would be 3 apples 2 large bunches of grapes)

    2. Into each box add 2 hard boiled eggs, 1 muffin, and 2 prepared fruits. Cover and refrigerate until you are ready to eat!

Notes

*the more black/brown your bananas are the better these muffins will turn out (much like banana bread), I find it best to use thawed black freezer bananas

**makes 8 muffins, you can either add an extra muffin to 2 boxes, or enjoy a couple muffins warm (thats what my son and I like to do)

My favorite thing to meal prep is definitely breakfast. I am not a morning person like in any way shape or form, I truly wish I was but my husband and parents alike can attest for how rough I can be in the morning. So to try to add a little light to my mornings I have found that prepping breakfast is life changing. So I wanted to share my new favorite Meal Prep Breakfast Bistro Box.

Bistro boxes seem to be popping up everywhere lately and there is do doubt to the reason why. Cafe’s and coffee shops especially seem to capitalize on these balanced meals and snacks, a little bit of protein, some whole grains, and of course some fruits/vegetables all in an easy to grab container. So simple right? So why not make a weeks worth all ready to go that won’t cost you $7 a pop in just a few minutes!

My goal was to make my Meal Prep Breakfast Bistro Box well balanced and easy to make so here is what I did. I made a recipe for ridiculously easy Flourless Banana Blender Muffins, a few ingredients, a blender, and a short time in the oven these beauties are ready to go for the week. With a ton of add in options these muffins will be sure to please on a weekly bases, and even work for all you gluten free and clean eating folks out there! You can switch up different add ins such as nuts, fruits, chocolate, as well as spices on a weekly bases by making full batches or on a daily bases by adding your extras to the tops of each individual muffin.

Next a bunch of hard boiled eggs, follow my foul proof steps and you’ll have a week’s supply of hard boiled eggs ready to add to your box! These can be placed into your boxes as is or peeled, but if you have an open work space that you will be eating these eggs please please consider peeling them all ahead of time. Not to get side tracked but when I had an office job my desk partner insisted on peeling her hard boiled eggs at her desk every morning, while I was pregnant!!! If you are not familiar with this scene in The Office, this is basically what happened at our whole desk clump every morning. (Sorry if you watched that and it grossed you out, with all honesty I love hard boiled eggs, just don’t be gross about them.)

Lastly fruit, I call for apples and grapes, these fruits are generally easy to purchase any time of the year and anywhere, making them true winners, but don’t be afraid to mix it up with what you like. As we get into citrus season you’d better bet I will be putting clementines into these bad boys.

So that is my easy peasy Meal Prep Breakfast Bistro Box, with tons of options you’ll almost be excited for weekday mornings 😉 kind of…
