With Trim Healthy Mama, there are LOTS of recipes that call for LOTS of egg whites. But the trouble with this is that leaves you with an abundance of egg yolks. Now you could simply purchase a carton of egg whites, but some people don’t like carton egg whites or they just prefer fresh eggs for one reason or another (like maybe they have their own chickens). So just what can be done with that huge amount of egg yolks? Well, that’s what today’s article is all about.
Measuring Egg Yolks
Say you put all your egg yolks in a single container and some (if not all) of them burst. Now its just yellow liquid and you can’t really “grab” each yolk individually. Well, the average egg yolk is approximately equal to one tablespoon.
Refrigerating Egg Yolks
Keep your egg yolks in an airtight container with a lid (I use a mason jar). Store in the fridge for no more than five days.
Freezing Egg Yolks
If you have more egg yolks than you can use at the moment or you just want to freeze them, you can. However, the water in the yolks crystalizes while freezing, causing the yolks to thicken or get gelatinous even after thawing. To combat this, beat the egg yolks with salt in a ratio of 1/4 teaspoon per 4 eggs yolks (or 4 tablespoons of egg yolk). Be sure to label that you added salt (or remember you did if you have a good memory) so you can adjust a recipe’s salt as necessary when you use them. And be forewarned: texture might be off a bit when using yolks that had been frozen. Freeze for up to 4 months.
Raw Egg Yolks
Some of my ideas involve raw egg yolks which some people aren’t thrilled about. If you’re worried about raw egg yolks, just skip over these ideas or ensure you’re using pasteurized eggs.

Miscellaneous Uses for Egg Yolks
- Add a yolk to your smoothie.If you are enjoying a fat-based smoothie or shake, toss in an egg yolk. It adds all the nutritious goodness of that yolk plus an extra delicious flavor dimension.
- Feed the yolks to your dog.Now, I wouldn’t recommend this if your dog has access to a chicken coop because you don’t want your dog to learn to snatch and eat fresh laid eggs, but egg yolks are also nutritious for dogs.
- Moisturize you hair.Whisk up 5 or more yolks until a little frothy then massage it into clean, wet hair. Allow it to set for about 15 minutes then rinse out with lukewarm to cold water (you don’t want water that’s too hot because then you’ll have scrambled eggs stuck in your hair). Enjoy the smooth softness that results!
